Soul of the Wine

The estate’s flagship wine, our Classic Cuvée, in a non-vintage, revealing the authentic identity of Chilham’s terroir. Crafted from Chardonnay, Pinot Noir, and Pinot Meunier, the Classic Cuvée expresses the heart and soul of Domaine Evremond. The Kentish terroir, with its chalky, flint-rich soils and oceanic influence, is translated through the wine’s mineral profile and tangible precision.

Domaine Evremond releases its Classic Cuvée in editions, each an expression that captures a distinct chapter in the estate’s story. Shaped by the character of its growing years and interpreted through the domaine’s hallmark style, every edition is singular yet unmistakably Domaine Evremond.

Behind the label

The label for Domaine Evremond's Classic Cuvée was inspired by archived imagery of the figure who gave the estate it's name: Charles de Saint-Evremond. The label's oval shape mirrors the frame of his 1659 portrait by Pieter van Gunst, while the estate's emblem, the cinquefoil (a heraldic five-petalled flower), is fashioned after Charles de Saint-Evremond's crest.

Classic CuvéeEdition I

The first edition of the Classic Cuvée comprises from Domaine Evremond's original plots, across two vintages. Edition I is built around the 2020 harvest, with reserve wines from 2019, adding layers of complexity to the blend. The intention was to create a cuvée that expresses the heart and soul of Domaine Evremond. The Kentish terroir, with its chalky soils and oceanic influence, is translated through the wine’s mineral profile and tangible precision.

The second edition of the Classic Cuvée is the next chapter of the Domaine Evremond story. Edition II is built around the 2021 harvest, with reserve wines from 2020 and 2019, adding layers of complexity to the blend. Edition II continues to express the heart and soul of Domaine Evremond and the Kentish terroir, with its chalky flint-rich soils and oceanic influence. The wine is precise and linear, with the Classic Cuvée’s trademark minerality and salinity – heightened by the added maturity of vines, now a year older.

    Left arrow

    2023 posed several challenges for the viticultural team, with high rainfall and minimal sunshine throughout the bulk of the growing season. The vintage was saved by an Indian summer, with dry and sunny conditions in September and October encouraging optimal ripening at the last moment.

    In contrast to 2023, 2022 will be remembered for its hot and dry summer. Following some much-needed rain at the start of September, we saw perfect weather up until the end of harvest. While the dry conditions resulted in smaller bunches than those we had seen in 2021, the quality of the fruit was exceptional.

    2021 was a year of extremes that saw a constant fluctuation of climatic conditions and temperatures. Despite this backdrop, we managed to pick a larger tonnage of grapes in 2021 than we did in 2020 and escaped the bouts of mildew that hit the south of England.

    A clear, bright autumn day, Tuesday 7th October marked the beginning of Domaine Evremond’s 2020 harvest, over a week earlier than in 2019. It was also the first day that our grapes would be pressed on site at the estate in Chilham – a monumental moment in the estate’s history.
